Medium Blend of spices, which is great in many different curries, or as a marinade, a rub, or to give extra depth of flavour to other recipes.
It is also great as a base for Singapore style fried noodles – simply stir fry some onions and strips of ginger, add a teaspoon of Madras curry powder, then when nicely coated, your other vegetables or meat, a touch of water, before adding your rice for vermicelli noodles.
